Deliciously soft cookies topped with a crunchy crumb, featuring warm apple flavors and a hint of cinnamon.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup firmly packed light brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 6 tablespoons unsalted butter (cold and cut into small cubes)
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup firmly packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup apple butter
  • 2 medium apples (peeled and chopped into small pieces, about 2 cups)

Instructions

  1. To make the crumb topping: In a mixing bowl, combine 1 cup flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Add cold, cubed butter and mix until crumbly. Set aside.
  2. To make the cookies: In another bowl, mix 2 cups flour, baking soda, 1/2 teaspoon cinnamon, nutmeg, and salt. In a separate bowl, cream together softened butter, 3/4 cup brown sugar, and granulated sugar until light and fluffy. Add the egg, vanilla extract, and apple butter, mixing until combined. Gradually add the dry ingredients to the wet ingredients. Finally, fold in the chopped apples.
  3. Preheat your oven to 350°F (175°C). Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper. Top each cookie with a generous sprinkling of the crumb topping.
  4. Bake for 12-15 minutes or until the edges are golden brown. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For extra flavor, consider adding chopped walnuts or pecans to the crumb topping. Make sure the butter is cold for the crumb topping to achieve a perfect crunch. For a softer cookie, chill the dough for about 30 minutes before baking.
