Delightful cookies infused with the flavors of fall, featuring warm spices and a chewy texture, perfect for sharing with loved ones.

Ingredients

  • 2 cups apple cider
  • 20 tablespoons unsalted butter
  • 2½ cups all-purpose flour
  • 2 teaspoons apple pie spice or pumpkin spice
  • 1 large egg (room temperature)
  • 1¼ cup light brown sugar
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • Ground cinnamon (for topping)

Instructions

  1. In a saucepan, simmer apple cider over medium heat until it’s reduced to about ¼ cup. Let it cool afterward.
  2. Melt the butter on low heat until it turns lightly browned. Allow it to cool for 15 minutes.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, spices, and a pinch of salt.
  4. In another bowl, mix the browned butter with the sugars. Add the egg, reduced cider, and a splash of vanilla.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Use a cookie scoop to drop the dough onto a lined baking sheet.
  7. Bake in a preheated oven at 375°F for 9–11 minutes, or until the edges are set.
  8. Let the cookies cool slightly before rolling them in cinnamon sugar and drizzling with icing.

Notes

To enhance flavor, don’t skip reducing the apple cider and ensure butter is cooled to avoid cooking the egg. Add nuts or raisins for texture if desired.
