Warm and cozy apple cider cookies that capture the essence of fall with every bite.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup apple cider
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons apple cider (for glaze)
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the apple cider, egg, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized amounts of the dough, form into balls, and roll in a mixture of granulated sugar and cinnamon.
  6. Place the balls on the prepared baking sheet and bake for 10-12 minutes until the edges are golden.
  7. For the glaze, mix the powdered sugar and apple cider until smooth. Drizzle over the cookies after they cool.

Notes

Make sure your butter is softened. Consider using fresh apple cider for more flavor. Store in an airtight container for up to a week.
