Turkey Enchiladas

A healthy twist on comfort food, these turkey enchiladas are packed with lean protein and are easy to make for the whole family.

Ingredients

  • 1 lb ground turkey
  • 4 whole wheat tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup reduced-fat cheese
  • 2 cups enchilada sauce
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Spices (cumin, chili powder)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground turkey with chopped onions and bell peppers until the turkey is browned.
  3. Add black beans and spices, and stir until everything is well combined.
  4. Spoon the turkey mixture onto whole wheat tortillas, roll them up, and place them seam-side down in a baking dish.
  5. Pour enchilada sauce over the top and sprinkle with reduced-fat cheese.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.

Notes

Use fresh vegetables for added crunch. Substitute ground turkey with shredded chicken for a different texture.
