Ingredients
Scale
- 3 large ripe bananas (mashed)
- 2 cups self-rising flour
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mash the bananas in a large mixing bowl until smooth.
- Add eggs and mix well.
- Gradually add self-rising flour, stirring gently until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack.
- Slice and enjoy!
Notes
- Use overripe bananas for the best sweetness and moisture.
- If you don’t have self-rising flour, substitute with 2 cups all-purpose flour + 1 ½ teaspoons baking powder + ¼ teaspoon salt.
- For a vegan version, replace eggs with flax eggs (1 tbsp flaxseed meal + 2.5 tbsp water per egg).
- Want extra flavor? Add chocolate chips, nuts, or cinnamon!
